Chef Iain has worked in the restaurant and hospitality business for over 20 years. He started as a cook at the age of 17 in Sacramento, California and trained in an authentic, classic Italian Restaurant specializing in fresh made pastas. In 1992, he moved to Maui, Hawaii to live with family and broaden his Pacific Rim culinary experience at prestigious restaurants and 5-star hotels: The Plantation House in Kapalua, The Maui Marriott in Kaanapali, The Sea House at Napili Kai, and The Hula Grill in Kaanapali. In 1998 he was hired as a Sous Chef at the The Ritz-Carlton, Kapalua taking his culinary, service and managerial skills to a 5 diamond level. When the Executive Chef of the Ritz, Patrick Callerac, decided to purchase Chez Paul Restaurant in Oluwalu, Iain followed and became the Chef de Cuisine perfecting his classic French culinary techniques while learning the details of operating a restaurant business.
In October of 2005, Iain was ready to buy his own restaurant and found the perfect little French Restaurant, Le Bistro, for sale on line. With family in Eugene and Salem, Iain decided to move to Corvallis, and create Duncan Culinary Ventures, Inc. with the vision of owning several different styles of restaurants.
In April of 2008, Iain and Tonya Duncan opened AQUA Seafood Restaurant and Bar (www.aquacorvallis.com) to showcase Pacific Rim Hawaiian Regional Cuisine in a casual fun environment with the flavors and music from Hawaii.
In March of 2009, Iain and Tonya Duncan opened TERZO West Coast Italian (www.terzocorvallis.com) located directly below AQUA to showcase classic Italian cuisine with West Coast (local) flavor twists.
In November of 2009, Iain and Tonya Duncan plan to open FLAT TAIL Pub located in the building next to Le Bistro on the river front.
